French-American fine dining at Kevin's

KEVIN’S at Aqua Resort Club, which serves fine French-American cuisine, officially opens today, Friday.

At its soft opening on Monday evening, members of the media and tour guides were treated to perfectly cooked prime rib and seafood dishes with wine.

Rom E. Manzon, Aqua Resort Club food and beverage manager, said the featured dish, which was the prime rib, is usually prepared in front of the guests. “If you want to have it seared, we can do that also,” he added.

Kevin’s serves only Black Mountain Premium Beef, which is known for its high quality products, Manzon said.

He added that prime rib is served with mashed potatoes, creamy corn, creamy spinach and Yorkshire pudding topped with gravy.

Kevin’s menu also includes seared scallops on truffle-mushrooms and saffron cream with caviar and salmon roe; oyster Rockefeller which is oysters baked in champagne with spinach and Parmigiano Reggiano; thin slices of smoked salmon with lemon-champagne jelly, citrus pith, caper berries, and red onion; and shrimp served on ice with horseradish and spiced cocktail sauce.

Among the entrees are the Live Whole Maine Red Lobster, grilled or steamed with lemon butter or finnadenni sauce; Salmon Meuniere, which is fresh salmon fried in lemon butter and topped with mushrooms; Pork Chop Calvados which is grilled Kurobuta pork chops in apple brandy cream sauce served with potatoes and vegetables; and crispy fried half chicken, deep fried to perfection, served on a bed of creamy porcini polenta.

Kevin’s has three sets of menus:

• Set A is a five-course meal that includes Kevin’s seafood trio, Maine lobster bisque, house salad, a choice of either half Maine lobster or roasted Black Mountain premium prime rib, and dessert.

• Set B is a four-course meal that includes Kevin’s seafood trio, house salad, a choice of either half Maine lobster or roasted Black Mountain premium prime rib, and dessert.

• Set C is a three-course meal that includes house salad, roasted Black Mountain premium prime rib, and dessert.

While the spacious restaurant has 100 seats, it accommodates only up to 24 persons at a time.

“We accommodate four tables only,” Manzon said. “If the reservation for 6 p.m. is full, which is four tables only, then the next client gets the 6:30 p.m. slot. The idea is to give the best service to our clients.”
