Hyatt highlights Philippines’ regional dishes

HYATT Regency Saipan is joining the island’s Filipino community in celebrating the 121st Philippine Independence Day by serving Philippine regional specialties at Kili Café & Terrace on June 12, Wednesday.

The “Mabuhay Night” buffet spread is the creation of Chef Pio Pilapil.

Kare-kare is a stew with thick peanut sauce, tripe, oxtail and vegetables. Laing is shredded or whole taro leaves with meat or seafood cooked in coconut milk spiced with chili, lemongrass, garlic,  ginger and shrimp paste.
Sisig is chopped pork and chicken dish. Tokwa’t baboy is boiled pork chunks and deep-fried tofu cubes while  kilawin laman dagat is seafood marinated in calamansi or Philippine lime.  Photos by Emmanuel T. Erediano

The food spread includes the following special Filipino dishes:

  • • Kare-kare — a stew with thick peanut sauce, tripe, oxtail and vegetables.
  • • The Bicol region’s laing with sugpo is shredded or whole taro leaves with meat and seafood cooked in coconut milk spiced with chili, lemongrass, garlic, ginger and shrimp paste.
  • • Pampanga’s crispy and spicy sisig which is chopped pork and chicken liver.
  • • Batangas’ hot bulalo or beef shank soup.

Also available are relyenong pusit which is stuffed squid tube with seafood sausage; kilawin lamang dagat or marinated seafood in Philippine lime; and tokwa’t baboy or boiled pork chunks and deep-fried tofu cubes.

Desserts include the Hyatt’s Brazo de Mercedes, a meringue roll with a custard filling dusted with powdered sugar; and leche flan which is the Philippine version of crème caramel and caramel custard.

There is also free flowing beer, iced-tea and red and white wines.

The Mabuhay Night dinner buffet is $60 per person and $40 for Club at the Hyatt members.

The festivities will start at 6:30 p.m., with the Saipan Music and Dance Company performing song and dance numbers in the hotel lobby and at Kili Café & Terrace.
