KEVIN’S Prime Rib & Seafood is back to re-introduce its upscale fine dining service, superb food and other culinary specialties.
One of the island’s most popular fine dining restaurants, Kevin’s at Aqua Resort Club shut down early in 2020 to comply with the restrictions imposed by the government in response to the Covid-19 pandemic.
On Dec. 1, 2022, Kevin’s opened its doors again to mark its fifth anniversary with a wine tasting event that featured a locally branded French wine, Aniti.
Aqua Resort Club Marketing & Public Relations Assistant Victoria S. Barnes said now that tourists are again visiting the CNMI, “we are excited to re-introduce our service to the community with our new Executive Chef Inok Lee.”
She said Chef Lee has prepared a delicious menu that highlights Aniti, a vin de pays or country wine imported from France.
Aniti comes in five varieties — Chardonnay, Merlot, Cabernet Sauvignon, Sauvignon Blanc and Shiraz — and is complemented by Chef Lee’s concoctions of appetizers which include Italian San Daniele ham, melon, balsamic gel, poached and smoked salmon rillette, shucked oyster with green apple granita, crab cake slider, squid ink brioche, guacamole, sweet pumpkin gnocchi, blue cheese cream and hickory wood smoked beef ribeye with jalapeno aioli.
“We hope to provide a special experience to all our guests this Christmas season and into the new year,” Barnes said.
Kevin’s is known for its premium cuts of Certified Angus Beef prime rib and seafood ala mode.
Its holiday menu’s popular entrée is Kevin’s beef ribeye steak served with creamed spinach, mashed potato and gravy. It comes with smoked and poached salmon rillette, horseradish cream and salmon egg for an appetizer.
