Hyatt brought in two chefs from its Incheon branch to prepare special Korean dishes throughout the festival: Sun Chang Ho and Han Kyung Hwa, a master chef.
Ho, in an interview, said every night there will be several variations of the main and side dishes so diners can come back again and again and expect something new.
The main dishes like pork belly, beef rib and a whole selection of barbeque will be available every night.
Ho said the Chuseok Festival in Korea is for families who gather and eat together.
The actual festival falls on Sept, 12, but the Hyatt will celebrate it for six nights.
“We have a lot of Koreans here who cannot go home and we want them to feel they are at home, so we bring the flavors of Korea to them,” Ho said.
Hyatt executive chef Gabriele Colombo said they started celebrating Chuseok on Saipan two years ago.
“We thought of inviting chefs from Korea to bring the authentic flavors of Korean cuisine here, and this has become very popular with our diners for the past two years,” Colombo said.
What they are offering to the diners for Chuseok is totally different from what one can usually eat at any Korean restaurants on island.
“This is something special, especially the menu, because our diners are special,” Colombo said.
Each night there will be four kinds of kimchi, season greens, appetizers, hot cuisine, desserts, and all-you-can-drink beer and iced tea.

The Hyatt is inviting everyone to indulge in exceptional culinary offerings to celebrate Chuseok from 6 p.m. to 9 p.m. every night at $43 per person. Club at the Hyatt cards are welcome.
