360 Revolving Restaurant served its first “boodle fight” meal on Thursday, Dec. 15, 2022.

“Boodle fight” refers to the Philippine military style of communal eating with one’s bare hands.

“It is probably the first boodle fight meal served in a restaurant in the history of the Marianas,” 360 Revolving Restaurant partnering owner Andrew Colburn said.

Boodle fight is the restaurant’s holiday specialty. The meal consists of rice, shrimp, grilled fish and pork, fruit, stuffed squid, and chicken inasal (grilled) served on fresh banana leaves.

Customers can choose between seafood and meat combo or pure seafood meal.

They are also provided with disposable clear plastic hand gloves  so they can eat with their hands.  But ceramic plates, spoons and forks are available upon request.

“The food is good! The chicken reminds me of the original ‘inasal’ in the Philippines,” said Rolando Reyes, one of the guests. “This is a good way to dine with your friends and family.”

360 Revolving Restaurant’s chef, Elizalde Muyon, said they “marinate the meat in our secret ingredients for more than 24 hours to make sure it absorbs all the flavors. It’s the reason why customers need to make a reservation ahead of time so that we also have the time we need to prepare the dishes,” he added.

Muyon said he is passionate about cooking. Asked about his “secret ingredient,” he said: “It’s the love that I sprinkle on my cooking. I love what I do. I think of my customers whenever I cook.”

The restaurant  is open for lunch and dinner starting today, Tuesday, Dec. 20, 2022.

Lunch will be served from 11 a.m. to 2 p.m. while dinner will be available from 5 p.m. to 10 p.m.
