Wild Bill’s: Where good food, good times and culture merge

I’ve been to Wild Bill’s a few times in the past but haven’t tried any of their specialties. Late on Thursday last week, before the chef clocked out for the day, I went there with two buddies and decided to try out two of the restaurant’s famous Thai specialties — Pad Thai and the signature fresh rolls or summer rolls.

Expecting some of the regular rolls you see everywhere, I was delighted to see a plate with huge rolls of mixed vegetables, bean thread noodles and served with a small bowl of peanut sauce with a sweet and spicy tang. Biting into a roll was awesome as I savored the mixed flavors of fresh vegetables. I finished one before moving on to my first order — Pad Thai.

A cheerful food staffer served the Pad Thai which she said is the most popular dish among Wild Bill’s diners.

We ordered the beef Pad Thai or Phat Thai which was a dish of soft yet firm stir-fried rice noodles with eggs, fish sauce, red chili pepper, bean sprouts and tofu and garnished with crushed peanuts on top. It was not as spicy as I earlier feared and we almost finished the whole serving.

Wild Bill’s Bar & Grill is one of the few places serving breakfast in the island. They serve omelets, Chamorro breakfast, steaks, pancakes, French toast, hash browns and fried rice. Wild Bill’s serves breakfast “anytime.”

For lunch and dinner, Wild Bill’s serves a fusion of American cuisine, Asian, Mexican, Italian, Filipino, and a variety of favorites including burgers, sandwiches, soup and salad, or explore any of the tasty recommendations Wild Bill’s has, mostly below the $15 range.

Your advantage when dining at Wild Bill’s is there’s no hurry. After a full dinner, you can turn your chair around or move up to the bar for your favorite drink, listen to music, watch TV, play billiards, swing to the latest beat on the dance floor, hang out with friends, or get yourself into a corner with your laptop and surf the internet. Wi Fi is free.
