Escolastica Tudela Cabrera, the name behind the former Esco’s Bake House on Capital Hill which opened in 1967, will celebrate her birthday with her family on Feb. 10.
“I am very happy to be able to reach my 80th birthday, and I will celebrate it with my children and the whole family,” Cabrera told the Variety in an interview on Sunday.
Cabrera’s daughter Olinka said that they are planning dinner with the whole family.
Cabrera said one of her children may not be able to make it to her birthday but the others will be present.
Esco’s Bake House is now known as Tun Goru in honor of Cabrera’s husband Gregorio Camacho Cabrera who passed away in Nov. 2006.
Escolastica T. Cabrera, the daughter of Vicente Ramirez Tudela and Rita Diaz Borja, was appointed to the municipal council in 1963, when the Northern Marianas was still part of the United Nations Trust Territory of the Pacific Islands, which was administered by the U.S.
“During my time, I had the chance to sit down with members of the United Nations and the U.S. Congress who visited the island on separate occasions,” Cabrera said.
She also got the chance to travel to Japan, the Philippines, the United States and other countries to attend various conferences.
She and her husband were the first to open a dry goods store on island.
“I’ve come a long way and it’s hard to believe the years have passed by so fast but I’m very grateful to be still here,” Cabrera said.
