THIS Labor Day, Herman’s Modern Bakery Inc. is proudly celebrating a remarkable milestone—the 20-year journey of Robert Sierra, their dedicated Industrial Machinery Mechanic.

A perfect fit

Robert’s journey at Herman’s Modern Bakery began with a strong foundation in industrial machinery.

“I started as a warehouseman with a lot of refrigeration/air conditioning and industrial machinery education and experience,” Robert recalls. “When the opportunity came up at the bakery, it was a great fit because I had always enjoyed the technical challenges of machinery and was looking for a specialized field where I could make a tangible impact.”

Keeping the wheels turning

As an Industrial Machinery Mechanic, Robert plays a crucial role in keeping Herman’s Modern Bakery operations running smoothly. His responsibilities span a wide range of essential equipment. “Essential machinery includes dough mixers, ovens, proofers, and conveyors,” Robert explains. “Each piece plays a critical role in the production process, from mixing ingredients to baking and cooling the final products.”

Robert’s passion for his work is evident: “I love the immediate gratification of solving problems and seeing the machines run[ning] smoothly again. There’s a real sense of accomplishment in knowing that the machines I maintain are crucial to the bakery’s success and that my work directly supports the production of delicious products.”

Meeting challenges head-on

Robert’s expertise has been put to the test many times over the years. He recounts a particular incident: “One time, a crucial dough mixer broke down during a busy production period. I quickly diagnosed the issue as a failed motor. I worked with the team to source a replacement part and installed it, all while keeping everyone informed and minimizing downtime. We managed to get back on track within a few hours, and the bakery was able to meet its production targets for the day.”

Common issues and solutions

Robert’s day-to-day work involves addressing various machinery problems. “Common issues include dough mixer malfunctions, refrigeration coolant issues, and temperature control problems with the ovens,” he said. “For dough mixers, it’s often about adjusting or replacing worn belts or bearings. Refrigeration coolants may need to be replaced or cleaned. Oven temperature issues usually involve calibrating sensors or checking heating elements.”

A commitment to safety and efficiency

Safety is paramount in Robert’s work. He ensures all equipment is well-maintained through a rigorous process. “I follow a strict maintenance schedule that includes regular inspections, cleaning, and part replacements,” Robert explains. “I also keep detailed records of all maintenance activities and any issues that arise. Preventive maintenance is key to avoiding unexpected breakdowns and ensuring everything runs efficiently.”

Robert’s commitment to safety extends to his personal practices and when training others. “I always wear the appropriate personal protective equipment such as gloves and safety glasses and follow safety protocols,” he emphasizes. “I ensure that all machines are powered down and properly locked out before performing any repairs or maintenance.”

Robert leads hands-on training sessions where he demonstrates safe operation techniques and the correct use of safety features. “I also provide written guidelines and ensure that everyone understands the importance of following safety protocols. Regular refresher courses help keep safety top of mind.”

Evolving with the industry

Over his two decades at Herman’s Bakery, Robert has witnessed and adapted to many changes in bakery technology. “Over the years, my role has evolved from basic maintenance to a more strategic position involving the implementation of new technologies and processes,” he explains.

Looking to the future, Robert is excited about potential advancements: “I anticipate advancements in automation and smart technology will become more prevalent. Machines will likely feature more sophisticated sensors and data analytics capabilities to improve efficiency and predict maintenance needs.”

He adds, “I’m excited about the potential for more integrated systems that use [artificial intelligence] to optimize production processes and prevent issues before they occur. Technologies like predictive maintenance tools and advanced diagnostics could further enhance the efficiency and reliability of bakery machinery.”

When asked about his most rewarding experience, Robert points at the successful implementation of a new maintenance program that he credits for reducing downtime and improving overall efficiency.

“Seeing the positive impact of these changes on the bakery’s operations and the satisfaction of my colleagues has been incredibly fulfilling,” he said.

Robert’s work ensures that every product meets the high standards that customers have come to expect. As he puts it, “The machines that we have at Herman’s Modern Bakery are both new and old technologies, and they simultaneously can provide the best quality products available for our guests.”
