The special menu which Hyatt executive chef Gabriele Colombo and his expert culinary team prepared will start with the first course: whole wheat pancake, black caviar and chives, sour cream, tuna rolls, apple, fennel, citrus oil, tomato gelatin, scallop tartare and basil essence capped with Russian standard vodka martini.
This will be followed with appetizers: smoked Sonoma duck prosciutto, grilled asparagus, parmesan crisp, roasted shallot and white balsamic dressing paired with Kendall-Jackson Vintage Reserve Sauvignon Blanc.
Gourmet pasta is next: homemade tortelli, burrata cheese and zucchini filling with sage butter, paired with Kendal Jackson Vintage Reserve Chardonnay.
A summer black truffle risotto with Fontina parsley foam will follow, paired with Kendal Jackson Vintage Reserve Chardonnay.
The main course: certified Angus Beef tenderloin, goose liver and spinach stuffing, sweet potato cake, green beans, Spumante pomegranate jus and Kendal Jackson Vintage Reserve Cabernet Sauvignon.
For dessert: pistachio and almond parfait, strawberry mint compote and limoncello sorbet, chocolate praline delights with Illy coffee and Remy Martin cognac.
