Zusuki is new Executive Chef of PPR

 

Zusuki moved up as Executive Chef last July 6.

Alex went to Hawaii in 1979, were he attend the Roosevelt High School and after high school, he enrolled in Leeward Community College in Hawaii.

After a year in Leeward Community College, he started working for Victoria Restaurant where they served only ribs. After four years in Hawaii he returned to Palau. Zusuki, started working with PPR in January 1985. PPR opened in 1984.

He started working at PPR as a cook helper, after two months, he got promoted to 2nd cook, and after one year he got promoted again to 1st cook.

Zuzuki continued to be promoted as Sous Chef this time and then after three years he then become the new Executive Chef.

Zusuki was also sent to Singapore for two weeks training with Pan Pacific.

He then went to Los Angeles from June 16 to 27 where he had a chance to observe in one of the well-known restaurant called MAKO.

Zusuki’s signature dish, is steamed fish with Palauan nuts (meiich) in soy sauce with sesame oil. His goal as a new Executive Chef for PPR is to attract more locals by making Palauan cuisine using local product.
