Healthy recipes for the family

Despite everyone’s busy schedule, take time to sign up and learn new and tasty recipes recommended by Northern Marianas College- Cooperative Research Extension and Education Service.

You will learn how to eat and live healthier, fit your favorite foods into a healthy diet, and how to spend less and eat better.

Here is one recipe from NMC CREES. 

Festive Bean Soup

Ingredients:

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

3 cups low-sodium chicken broth

1 cup tomatoes canned, chopped

1 ½ cup red kidney beans

½ tsp. black pepper

1 tsp dried thyme

1 cup pasta shells or macaroni, cooked

½ cup kangkung, chopped

Procedure:

1. Heat the oil in a large pot over medium high heat.

2. Add the onion and garlic, sauté for 5 minutes.

3.  Add the red bell pepper and sauté for 3 more minutes.

4. Add the broth, tomatoes and beans. Bring to a boil.

5. Simmer over low heat for 20 minutes.

6. Add the black pepper, thyme, kangkong, and cooked pasta. Simmer for 5 more minutes.
